The Flavor of Provence


Herbes de Provence

Nothing quite speaks the flavors of Provence as much as Herbes de Provence. Traditionally a dry melange of different herbs, it is used in everyday cooking in Provence and adds just the right amount of flavor of the region to dishes. Throughout Provence, thyme, rosemary, mint and oregano grow wild. Often, as you walk through a village or along a path, you'll brush up against large rosemary or thyme bushes and you can smell the scents of Provence. The air is filled with the aroma of the herbs that grow in the area. So naturally, these same herbs are gathered and used in the mix that we call Herbes de Provence.

Its use is endless - use mixed into scrambled eggs, on focaccia bread, pizzas, in stews, grilled vegetables, on roasted or grilled chicken, meat or game- anywhere you would add pepper or salt you can add Herbes de Provence. The great thing is you can make your own to your own taste - you don't need to travel to Provence to buy some!! Here's a starter recipe but feel free to add or subtract as you feel fit. Mix up different batches - some with lavender some without, some with mint perhaps, or with marjoram, some without... the possibilities are endless. Let this simple mixture transport you to the pathways of Provence!

1 Tablespoon dried thyme
1 Tablespoon dried rosemary
1 Tablespoon dried fennel
1 Tablespoon dried summer savory
1 Tablespoon dried oregano
1 Tablespoon culinary lavender (optional)

Mix together and store in a small glass jar with a tight fitting lid. I keep mine in an old French mustard jar with a lid.

This is by far my favorite herb mix. I have a friend pick me up some on her annual visit to Provence. Now I can make it myself...thanks!
