Mmmmmm.....olive oil

When you enter the shop/mill tucked away into the corner of the center of this tiny Provençal town in the Valley of Baux-de-Provence, not only do you have the opportunity to try all of their varieties of oil produced, you also have the opportunity to step back in time and view the ancient olive presses and mill.


The Moulin Saint-Michel, has been processing the harvest of the olive growers in the Alpilles, Provence since 1744. They carefully watch over the origin of the olives and, respecting ancestral techniques, store them in their lofts before bringing them to the heart of the mill where they are stripped, washed, and ground.



They then carry out a single cold pressing, always resulting in extra virgin quality. The oil is composed of the main varieties found in the Valley of Baux-de-Provence: the Grossane olive,
the Salonenque, Verdale, Berruguette, and the Picholine, an ideal combination refining and elevating the flavors of the food with which it is used.  All of this care results in a luscious oil that is velvety on the tongue but full of flavor.
